Brewing Guide
Vessel: Gaiwan or Clay Teapot.
Water Temperature: Boiling (95∘C−100∘C).
Ratio: 4–5g of tea per 100ml of water.
Steeping: Give the leaves a quick 5-second rinse with boiling water and discard the liquid to awaken the compressed cake. For the drinking infusions, begin with flash-steepings of 5–10 seconds. This resilient, high-altitude tea easily delivers 10+ complex, evolving infusions.
