Origin: Nantou, the central Taiwan
Dong Ding has two meaning: the mountain’s name in Nantou and the way of making tea. In ancient Taiwan, Hakka people called this area Dong Ding, which means the top of the mountain. In another legend, ancestors didn’t have shoes and walked with tiptoe(踮著腳),which sounds like Doing Ding in Taiwanese. Now Dong Ding is the established way of making tea with a stronger taste and fermentation. Made with Chin-Shin Green-Tip tea leaves, it is a popular Taiwanese oolong tea exhibiting a rich fruity and strong charcoal Smokey taste.
Brewing Instructions
tea leaves: 5g, Water: >90°C 150cc.
1st brew: 70 seconds, 2nd brew: 60 seconds, 3rd-5th brew: 70-90 seconds
