High Mountain Tea from Taiwan. Unlike conventional tea plantation management, this tea is grown with minimal intervention during the late stages of leaf development, allowing small green leafhoppers to feed on the tender leaves (buds). This process imparts a distinctive, rich honey-like aroma to the finished tea, making it a unique and highly sought-after variety. The way of making this tea is similiar to oriental beauty but combine with oolong tea wrapping skill. Therefore, this oolong has uniquie natural honey taste but also with the taste light roasted oolong.
Pot Brewing:
In a pre-warmed teapot with a 100ml capacity, add 4 g of tea leaves. Pour in 90°C hot water and steep for 90 seconds for the first brew, 50 seconds for the second brew, and increase steeping time by 20 seconds for each subsequent brew.Cup Brewing:
Use 6g of tea leaves with 300ml of hot water at 90°C. You may scale proportionally. Steep for 6 minutes before drinking. When about half the cup remains, you can top it up with boiling water until the flavour fades.Cold Brew:
Use 15 grams of tea leaves with 750ml of cold water. Place in the refrigerator for 12 hours before serving.
